  • 1 teaspoon black pepper
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 large onion, quartered
  • 4 large carrots, chopped into large pieces
  • 3 to 4 pieces potatoes, diced (Yukon gold or red)
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce

Instructions
 

Preparing the Meat

  • Season the chuck roast with salt and black pepper liberally on both sides.

Searing the Roast

  • In a hot skillet, sear the roast for about 3-4 minutes on each side until it develops a golden-brown crust.

Layering Ingredients

  • Place the quartered onions in the bottom of your slow cooker, then layer the chopped carrots and potatoes on top.

Adding the Garlic and Herbs

  • Sprinkle the minced garlic, rosemary, and thyme over the vegetables.
