  • 1 pound 1 pound of your favorite sausage (chicken, turkey, or pork) Choose high-quality sausage for best flavor.
  • 2 cups 2 cups of mixed seasonal vegetables (bell peppers, zucchini, carrots) Feel free to customize based on seasonal availability.
  • 1 medium 1 medium onion, diced Provides flavor and sweetness.
  • 2 cloves 2 cloves of garlic, minced Adds aroma and flavor.
  • 2 tablespoons 2 tablespoons of olive oil Used for sautéing.
  • Salt and pepper to taste
  • Oregano and basil (fresh or dried) Enhances flavor profile.
  • 1 handful A handful of spinach or kale (optional) For added nutrition.

Instructions
 

Preparation

  • Wash and chop your vegetables into bite-sized pieces for even cooking.

Cooking

  • In a large skillet, heat the olive oil over medium heat.
  • Add the sausage, breaking it apart with a spatula, and cook until browned and fully cooked, about 5-7 minutes.
  • Add the diced onion and minced garlic to the skillet, stirring occasionally for about 2-3 minutes until the onion becomes translucent.
  • Add the mixed vegetables and season with salt, pepper, oregano, and basil. Cook until the vegetables are tender, around another 5-7 minutes.
  • If desired, add a handful of spinach or kale and cook until wilted.

Serving

  • Serve your Sausage and Veggies Skillet hot, pairing well with rice or enjoying it on its own.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. This dish also freezes well; cool completely before freezing.
