  • 4 pieces succulent chicken thighs, skin-on and bone-in Opt for high-quality, organic chicken thighs for best flavor.
  • 6 cloves garlic, minced Adjust amount based on personal taste.
  • 1 large onion, finely chopped
  • 2 tablespoons olive oil Use extra virgin for better flavor.
  • 1 tablespoon ground turmeric Can adjust based on preferences.
  • 1 tablespoon paprika Feel free to adjust based on taste.
  • Salt and pepper to taste
  • Fresh herbs (like cilantro or parsley) for garnish

Instructions
 

Preparation

  • Pat the chicken thighs dry with a paper towel.
  • In a mixing bowl, combine minced garlic, chopped onion, olive oil, turmeric, paprika, salt, and pepper.
  • Add the chicken thighs and coat them well in the marinade. Let sit for at least 30 minutes, or ideally overnight in the refrigerator.

Cooking

  • In a skillet over medium-high heat, add olive oil and heat until hot.
  • Add the marinated chicken thighs skin-side down. Sear for about 5-7 minutes until golden brown.
  • Flip and sear the other side for another 5 minutes.
  • Lower the heat, cover the skillet, and let the chicken cook for an additional 20-25 minutes until cooked through.
  • Check the internal temperature, which should reach 165°F (75°C).
  • Let the chicken rest for a few minutes before serving.

Serving

  • Garnish with fresh herbs and serve alongside your favorite seasonal sides.

Notes

Store any leftovers in an airtight container in the refrigerator. This dish can also be frozen for up to three months. Reheat gently to retain juiciness. Adjust spices to personal preference.
