  • 1 pound chicken breast, cut into bite-sized pieces

  • 3 cloves garlic, minced
  • 1 cup onion, diced
  • 1 cup cherry tomatoes, halved
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Grated Parmesan cheese (optional)

Preparation

  • In a large skillet over medium heat, add a splash of olive oil and sauté the diced onion until it becomes translucent, about 3-4 minutes.
  • Add the chicken pieces to the skillet, seasoning them with salt and pepper. Cook until they are golden brown and cooked through, around 6-8 minutes.
  • Stir in the minced garlic and halved cherry tomatoes, cooking for an additional 2-3 minutes until aromatic.
  • Add the gnocchi to the pan along with the chicken broth. Bring the mixture to a gentle simmer. Cover and cook for about 5-7 minutes until the gnocchi is tender.
  • Stir in the fresh spinach and allow it to wilt, which will take about 2 minutes. Serve hot, topped with grated Parmesan cheese if desired.

Notes

Don’t overcrowd the pan for better cooking results. Use fresh spinach and high-quality chicken broth for enhanced flavor. For dietary adjustments, gluten-free gnocchi can be used.
