Ingredients
  

  • 2 lbs bone-in chicken thighs
  • 3 cups cubed sweet potatoes
  • 2 cups broccoli florets
  • 1 large red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • to taste salt and pepper
  • optional tahini-lemon drizzle (for serving)

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Toss chicken thighs with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  • Place the chicken on a large baking sheet. Scatter cubed sweet potatoes, broccoli florets, and red onion around the chicken.
  • Roast for 35–40 minutes, or until the chicken is golden and cooked through and the vegetables are tender and browned.
  • Serve hot. Optionally drizzle with tahini-lemon sauce for added flavor.

Notes

This recipe serves 4–6 generously and stores well for up to 4 days in the fridge. Optional tahini-lemon drizzle adds a tangy, creamy finish. Ideal for busy nights or big family dinners.
