Meatball Ingredients

  • 1 lb Ground chicken (or turkey) Ground turkey can also be used.
  • 2 cups Fresh spinach, chopped Fresh spinach enhances the flavor.
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup Almond flour For a lower carb option.
  • 2 cloves Garlic, minced Can sauté with spinach for extra flavor.
  • 1 tsp Onion powder
  • 1 large Egg
  • to taste Salt and pepper
  • 1 tsp Italian seasoning (optional) For added flavor.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the ground chicken, chopped spinach, grated Parmesan cheese, almond flour, minced garlic, onion powder, salt, pepper, and the egg. Mix everything until well incorporated.
  • Using your hands, form the mixture into small meatballs, about 1 to 1.5 inches in diameter.

Cooking

  • Place the meatballs on a lined baking sheet.
  • Bake them in the preheated oven for about 20-25 minutes, or until they are cooked through and nicely browned.

Serving

  • Once baked, let them cool slightly before serving. Enjoy with zucchini noodles, a fresh salad, or on their own.

Notes

Don’t overmix the ingredients to keep meatballs tender. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for later.
