  • 1/4 cup fresh lime juice

For the Mango Salsa

  • 1 piece ripe mango, diced
  • 1/2 piece red bell pepper, diced
  • 1/4 piece red onion, finely chopped
  • 1 piece jalapeño, seeds removed and minced
  • 1/4 cup fresh cilantro, chopped
  • 1 piece lime juice
  • Salt to taste

Preparation

  • In a bowl, whisk together honey, lime juice, minced garlic, cumin, salt, and pepper.
  • Add the chicken breasts and coat them in the marinade, allowing them to sit for at least 30 minutes.

Prepare the Mango Salsa

  • In a separate bowl, combine the diced mango, red bell pepper, red onion, jalapeño, cilantro, lime juice, and salt.
  • Mix well and set aside to allow the flavors to meld together.

Cooking

  • Grill or pan-sear the marinated chicken over medium-high heat for 6-7 minutes on each side or until the internal temperature reaches 165°F.

Serving

Notes
