Ingredients
  

For the Meat

  • 1 pound ground lamb or beef Opt for fresh ground for the richest flavor.
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • to taste Salt and pepper

For the Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1 unit cucumber, grated
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill
  • to taste Lemon juice

For Assembly

  • 2 cups cooked rice (or quinoa)
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • to taste Fresh parsley for garnish

Instructions
 

Prepare the Meat

  • Heat a skillet over medium heat. Add the ground lamb or beef, breaking it apart with a spatula as it cooks.
  • Season with oregano, garlic powder, salt, and pepper. Cook until browned and fully cooked, about 7-10 minutes.

Make the Tzatziki Sauce

  • In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, fresh dill, and a squeeze of lemon juice.
  • Stir everything together until well mixed, then refrigerate to allow the flavors to meld.

Assemble the Bowls

  • Start with a base of cooked rice in each bowl.
  • Top generously with the savory meat, then add the halved cherry tomatoes, sliced red onion, and sprinkle with feta cheese.

Drizzle with Tzatziki

  • Finish off the bowls with a lovely drizzle of tzatziki sauce and a garnish of fresh parsley.

Notes

Use quality meat for the richest flavor. Fresh herbs in the tzatziki will elevate flavor. For gluten-free, serve over quinoa or gluten-free rice.
