  • 1 teaspoon baking soda
  • 0.5 teaspoon salt

  • 1 cup unsalted butter, softened
  • 0.75 cup granulated sugar
  • 0.75 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs

Mix-ins

  • 2 cups chocolate chips (or your favorite mix-ins)

Preparation

  • Preheat your oven to 350°F (180°C). Line baking sheets with parchment paper to prevent sticking.
  • In a bowl, whisk together the gluten-free all-purpose flour, baking soda, and salt. Set aside.
  • In a large mixing bowl, combine the softened butter, granulated sugar, and brown sugar. Beat with an electric mixer on medium speed until light and fluffy.
  • Beat in the eggs one at a time, followed by the vanilla extract, mixing until everything is well combined.
  • Gradually add the flour mixture to the wet ingredients. Stir until just combined, avoiding over-mixing.
  • Add your chocolate chips or any other mix-ins you prefer, gently folding them into the dough.
  • Use a cookie scoop or tablespoon to portion out the dough onto your prepared baking sheets, leaving space in between each cookie.

Baking

  • Bake for 10-12 minutes, or until the cookies are lightly golden around the edges. Allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Use a good gluten-free flour blend for the best results. Chilling the dough for at least 30 minutes before baking can lead to even thicker cookies. Experiment with flavors by adding nuts, dried fruits, or even a sprinkle of sea salt on top.
