Preparation

  • Cut the chicken breasts into bite-sized pieces and set them aside.
  • In a mixing bowl, combine gluten-free flour, salt, pepper, and any additional seasoning.
  • In another bowl, whisk together the buttermilk and egg until well combined.

Coating and Cooking

  • Dip each piece of chicken into the wet mixture, then into the dry flour mixture, ensuring a thorough coating.
  • Preheat your air fryer to 400°F (200°C) and lightly spray the basket with cooking spray.
  • Place the coated chicken nuggets in a single layer in the air fryer basket, spraying the tops with more cooking spray.
  • Cook for about 10-12 minutes, shaking the basket halfway through to ensure even cooking.
  • Once the nuggets are golden brown and cooked through, serve them hot with your favorite dipping sauces.

Notes

Taste the flour mixture before coating the chicken to adjust seasonings. These nuggets can be doubled for larger gatherings and reheat well in the air fryer. Use a meat thermometer to ensure the chicken reaches 165°F (75°C).
