Ingredients
  

Main Ingredients

  • 2 boneless, skinless chicken thighs or breasts
  • 1 tbsp olive oil
  • 1 zucchini sliced
  • 1 red bell pepper chopped
  • 0.5 small red onion sliced
  • 1 cup chopped mushrooms
  • 1 cup chopped spinach
  • 1 garlic clove minced
  • 1 tsp smoked paprika
  • 0.5 tsp dried oregano
  • salt and pepper to taste
  • 0.5 lemon juiced

  • crumbled feta or sliced olives

Instructions
 

  • Rub the chicken with smoked paprika, oregano, salt, and pepper. Let it sit for 5–10 minutes while you prep the vegetables.
  • Heat olive oil in a skillet over medium-high heat. Sear the chicken for 4–5 minutes per side until golden and cooked through. Remove and set aside.
  • In the same skillet, sauté garlic and red onion for 1 minute. Add mushrooms, bell pepper, and zucchini. Cook until vegetables are softened, about 6 minutes.
  • Stir in chopped spinach until wilted. Return the chicken to the pan. Squeeze lemon juice over everything and cook 2 more minutes. Serve hot.
