  • 1 pieces red bell pepper, diced
  • 1 pieces cucumber, diced

  • 1 cup corn (fresh or frozen, thawed)
  • 1/4 cup fresh cilantro, chopped
  • 2 pieces limes, juiced
  • 2 tablespoons olive oil

Preparation

  • Cook the shelled edamame according to the package instructions; typically boiling or steaming for around 3-5 minutes until tender.
  • While the edamame is cooking, chop the red bell pepper, cucumber, and red onion and combine in a large mixing bowl with the corn and fresh cilantro.

Assembly

  • Once the edamame is ready, drain and cool under cold water before adding to the bowl of chopped vegetables.
  • In a small bowl, whisk together lime juice, olive oil, salt, and pepper for the dressing.
  • Pour the dressing over the salad mixture and toss until everything is evenly coated.

Notes
