  • 1.5 cups gluten-free all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 1 tsp ground cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp salt

Wet Ingredients

  • 1 cup unsweetened applesauce
  • 0.5 cups maple syrup
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract

  • 1 cup diced fresh apples (any variety)

Preparation

  • Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or grease it lightly.
  • In a large mixing bowl, combine the gluten-free flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Stir well to combine.
  • In a separate bowl, whisk together the applesauce, maple syrup, melted coconut oil, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry mixture and stir until just combined. Be careful not to overmix.
  • Gently fold in the diced apples until evenly distributed throughout the batter.
  • Spoon the batter into the prepared mini muffin tin, filling each cup about ¾ full.
  • Bake for 15-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.

Notes

For best results, don’t overmix the batter, and choose a mixture of sweet and tart apples. Store in an airtight container at room temperature for up to 3 days.
