Ingredients
  

  • 2 cups gluten-free flour blend (with xanthan gum)
  • 3/4 cup unsweetened cocoa powder (Dutch processed)
  • 1.5 tsp baking soda
  • 1/2 tsp salt
  • 1.25 cups dairy-free milk (almond, oat, or coconut)
  • 1/2 cup avocado oil or melted coconut oil
  • 1/2 cup unsweetened applesauce (or mashed banana)
  • 2 tsp pure vanilla extract
  • 1 tbsp apple cider vinegar
  • 1/2 cup dairy-free dark chocolate chips

Instructions
 

  • Preheat oven to 350°F (175°C). Line two 8-inch round cake pans with parchment paper.
  • In a large bowl, whisk together gluten-free flour, cocoa powder, baking soda, and salt.
  • In a second bowl, combine dairy-free milk, oil, applesauce, and vanilla extract. Stir in apple cider vinegar last.
  • Pour the wet ingredients into the dry ingredients and mix until just smooth. Do not overmix.
  • Fold in the dairy-free dark chocolate chips for added richness and texture.
  • Divide batter evenly into prepared pans and bake for 30–35 minutes. Toothpick should come out mostly clean.
  • Cool cakes in pans for 10 minutes, then turn out and cool completely before frosting.
  • Frost with dairy-free ganache, coconut whipped cream, or avocado-based chocolate frosting as desired.

Frost with dairy free ganache or whipped coconut cream. Easily made egg-free with flax eggs. Ideal for mixed diet families, potlucks, or clean eating dessert tables. Works beautifully with avocado based frostings or coconut whipped cream. Can be baked as cupcakes too reduce baking time by 8–10 minutes.
