  • 14 oz coconut milk 1 can
  • 2 cups chicken broth

  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Preparation

  • Rinse the jasmine rice under cold water until the water runs clear.

Cooking

  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion, garlic, and ginger, cooking until the onion becomes translucent.
  • Add the diced chicken, seasoning it with salt and pepper. Sauté until the chicken is fully cooked, approximately 5-7 minutes.
  • Pour in the coconut milk and chicken broth, then stir in the soy sauce. Bring the mixture to a simmer.
  • Add the rinsed rice to the skillet. Stir well, cover, and reduce the heat to low. Let it cook for about 15-20 minutes or until the rice absorbs the liquid and becomes tender.

Serving

  • Remove the skillet from heat. Fluff the rice with a fork and garnish with fresh cilantro before serving.

Notes
