  • 1 lb store-bought potato gnocchi Pillowy texture
  • 1 small yellow onion, diced Adds flavor and sweetness
  • 3 cloves garlic, minced For aromatic flavor
  • 1 cup mushrooms, sliced Adds umami flavor
  • 2 cups baby spinach For color and nutrition
  • 1 can (14 oz) diced tomatoes, drained For the sauce base
  • 1 cup chicken or vegetable broth Liquid for the sauce
  • 1/2 cup heavy cream (or a dairy-free alternative) For creaminess
  • 1 tsp dried sage (or 1 tbsp fresh, chopped) Adds autumn flavor

Instructions
 

Brown the turkey

  • Heat 1 tbsp olive oil in a large oven-safe skillet over medium-high heat.
  • Add the ground turkey, season with salt and pepper, and cook until browned and no longer pink.
  • Break it up with a spatula as it cooks.
  • Transfer the cooked turkey to a plate and set aside.

Sauté veggies

  • Add the remaining olive oil to the same skillet.
  • Sauté the onion until translucent, then add mushrooms and cook until they release their juices.
  • Stir in the garlic and cook 30 seconds until fragrant.

Build the sauce

  • Return the turkey to the skillet.
  • Add the diced tomatoes, broth, cream, sage, thyme, and smoked paprika.
  • Stir gently to combine and bring to a simmer.

Add gnocchi and simmer

  • Gently fold in the gnocchi and spinach.
  • Cover and simmer until the gnocchi float and are tender, about 5–7 minutes.
  • If the skillet becomes too thick, add another splash of broth.

Finish and serve

  • Sprinkle with Parmesan (if using) and chopped parsley.
  • For a golden finish, place the skillet under a broiler for 2–3 minutes until the top is lightly browned — watch closely.
  • Serve warm straight from the pan and enjoy the comforting fall flavors.

Notes

Don’t overcook the gnocchi: they’re done once they float and are soft to the bite. For storage, cool leftovers then store in an airtight container for up to 3 days. Reheat gently over low heat with a splash of broth.
