Classic Gluten Free Meatloaf with Mashed Potatoes

Ingredients
  

For the Meatloaf

  • 2 lbs ground beef or turkey (90% lean)
  • 2 eggs
  • 0.5 cup certified gluten free oats or potato flakes
  • 1 onion finely diced
  • 2 cloves garlic minced
  • 0.25 cup unsweetened oat milk
  • 1 tbsp mustard
  • 2 tsp gluten free Worcestershire sauce
  • salt and pepper to taste

For the Glaze

  • 0.25 cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp apple cider vinegar

For the Mashed Potatoes

  • 2 lbs Yukon Gold or russet potatoes peeled and cubed
  • 3 tbsp plant butter
  • 0.33 cup unsweetened oat milk
  • salt and white pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment or use a loaf pan.
  • In a bowl, mix ground meat, eggs, oats or flakes, onion, garlic, oat milk, mustard, Worcestershire sauce, salt, and pepper. Combine gently to avoid overmixing.
  • Shape mixture into a loaf and place on prepared sheet or pan. Bake for 45–55 minutes.
  • While baking, mix ketchup, brown sugar, and vinegar. Brush over loaf during final 10–15 minutes of baking.
  • Let meatloaf rest for 10 minutes before slicing to retain juices.
  • Meanwhile, boil cubed potatoes in salted water until fork tender, 12–15 minutes. Drain and return to pot.
  • Add plant butter and oat milk to potatoes. Mash until smooth. Season with salt and white pepper.
  • Serve meatloaf slices over mashed potatoes. Spoon extra glaze on top if desired.

Notes

To freeze: Wrap individual slices or the whole cooked loaf tightly and store for up to 3 months. Reheat with a splash of broth. Mashed potatoes also freeze well, add a bit of plant milk when reheating to regain creaminess.
