  • 2 medium zucchinis
  • 1 cup almond flour or any preferred gluten-free flour
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper

Preparation

  • Grate the zucchinis using a box grater. After grating, place the zucchini in a clean kitchen towel and squeeze out excess moisture.
  • In a large mixing bowl, combine grated zucchini, almond flour, Parmesan cheese, eggs, garlic powder, onion powder, salt, and pepper. Mix thoroughly until everything is well combined.
  • Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  • Using your hands, form the mixture into small patties and arrange them on a plate.

Cooking

  • Lightly spray the air fryer basket with olive oil before placing the fritters in a single layer.
  • Spray the tops of the fritters with more olive oil and cook for about 10-12 minutes, flipping halfway, until golden brown and crispy.

Notes

Ensure to squeeze out as much moisture from the zucchini as possible. For a low-carb option, consider using coconut flour instead of almond flour. Serve with Greek yogurt or a homemade dipping sauce. These fritters can be stored in an airtight container in the refrigerator for up to 3 days.
