  • 1/4 cup neutral oil (canola or light olive oil)
  • 1 tsp vanilla extract

Dry Ingredients

  • 1/2 cup unsweetened cocoa powder Use high-quality for rich flavor.
  • 1/2 cup almond flour (or all-purpose flour) Can substitute with oat flour for nut-free.
  • 1/3 cup erythritol or monk fruit sweetener (granulated) Check for hidden sugars in brands.
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp cinnamon Optional for extra warmth.

Preparation

  • Preheat the oven to 350°F (175°C). Grease an 8x8-inch pan and line it with parchment for easy removal.

Mix Wet Ingredients

  • In a large bowl, whisk together the Greek yogurt, eggs, oil, and vanilla until smooth.

Combine Dry Ingredients

  • In another bowl, sift the cocoa powder, almond flour, sweetener, baking powder, salt, and cinnamon. Stir to combine.

Make the Batter

  • Fold the dry mixture into the wet ingredients until just combined. If using chocolate chips, gently fold them in.

Bake

  • Pour the batter into the prepared pan, smoothing the top. Bake for 18–22 minutes, or until a toothpick comes out with a few moist crumbs.

Cool and Serve

  • Let cool in the pan for at least 15 minutes before slicing. These brownies firm up as they cool and taste even better the next day.
