Ingredients

For the Cookies

  • 2 cups Gluten free flour blend (with xanthan gum if possible) Ensure your blend contains xanthan gum for best results.
  • 1 cup Butter (softened) Softened butter helps in mixing.
  • 3/4 cup Sugar (regular white, sometimes half brown) Adjust sugar type based on preference.
  • 1 large Egg Use room temperature egg for better mixing.
  • 1 teaspoon Vanilla extract Vanilla enhances flavor.
  • 1 teaspoon Baking powder For leavening.
  • 1/4 teaspoon Salt Balances sweetness.
  • 24 pieces Whole almonds Used for fingernails.
  • Optional Red jam or decorating gel For the spooky effect.

Instructions

Preparation

  • Cream the butter and sugar until fluffy.
  • Mix in the egg and vanilla extract.
  • Stir in the gluten free flour blend, baking powder, and salt until a soft dough forms.
  • Chill the dough for 20 to 30 minutes.

Shaping

  • Pinch off pieces of dough and roll into finger logs.
  • Press an almond into one end for the nail.
  • Pinch the middle to create a knuckle bump, and score with a knife.

Baking

  • Bake until the edges are set and just barely golden.
  • Add jam near the almond after cooling for decoration.

Notes

Keep the dough chilled to prevent spreading and maintain shape. Use a reliable gluten-free flour blend. If using, add jam only after cooling the cookies.
