  • 2 slices whole grain or gluten-free bread Choose based on dietary preference.
  • 1 ripe avocado Look for avocados that yield slightly when pressed.
  • 1/4 cup hummus Store-bought or homemade.
  • a handful baby spinach Fresh and washed.
  • 1/4 cucumber, thinly sliced For added crunch.
  • 1 small tomato, sliced
  • Salt and pepper to taste
  • Optional: sprouts, sliced radishes, or pickles for extra crunch Add as desired.

Preparation

  • Toast your bread slices to your desired level of crunchiness.
  • In a bowl, mash the ripe avocado using a fork. Add a little salt and pepper to enhance the flavor.
  • Spread hummus generously on one side of each slice of bread.
  • Layer your spinach, cucumber slices, and tomato on one piece of bread.
  • Carefully place the second slice of bread on top, hummus side down. Press gently, cut in half, and serve.

Notes

Prepare the components in advance for freshness, and store separately to prevent browning of the avocado. Sprinkle lemon juice on cut avocado if storing.
