Ingredients
  

For the Flatbread

  • 2 medium medium-sized potatoes, peeled and diced Use any preferred potatoes.
  • 1 cup all-purpose flour (or gluten-free flour if needed) Substitute with gluten-free flour as needed.
  • 1 teaspoon baking powder
  • 1 teaspoon sea salt
  • 2 tablespoons olive oil
  • 1/4 cup plant-based milk (unsweetened)
  • to taste Fresh herbs (like rosemary or parsley) For added flavor.
  • to taste Optional: garlic powder or onion powder For extra seasoning.

Preparation

  • Begin by boiling the diced potatoes in a pot of salted water until tender, about 10-15 minutes. Once cooked, drain and let them cool slightly before mashing.
  • In a mixing bowl, combine the flour, baking powder, and sea salt. If you’re using any additional spices like garlic or onion powder, add them at this stage for more flavor.
  • In another bowl, combine the mashed potatoes, olive oil, and plant-based milk. Stir until smooth and well mixed.
  • Gradually mix the dry ingredients into the potato mixture until a soft dough forms. If the dough is too sticky, you can add a little more flour as needed.
  • On a lightly floured surface, knead the dough gently for a couple of minutes until aiming for a smooth consistency.
  • Divide the dough into small balls. On a floured surface, roll each ball out into a flat round, about 1/4 inch thick.

Cooking

  • Heat a non-stick skillet over medium heat. Cook each flatbread for about 3-4 minutes on one side, until bubbles form, then flip to cook the other side until golden brown.

Serving

  • Once done, serve your Vegan Potato Flatbread warm, garnished with fresh herbs, or enjoy it with your favorite dipping sauces.

Notes

For a fluffy flatbread, ensure your potatoes are well-mashed and free from lumps. Cooking over medium heat is key to avoid burning. Feel free to experiment with seasonings.
