Ingredients
  

Wet Ingredients

  • 3 very ripe bananas (about 1 1/2 cups mashed) The riper, the better—brown-speckled bananas add sweetness and moisture.
  • 2 tbsp ground flaxseed Used to make flax 'eggs'.
  • 6 tbsp warm water To mix with flaxseed.
  • 1/3 cup coconut oil, melted (or neutral oil)
  • 1/2 cup maple syrup or brown sugar
  • 1 tsp pure vanilla extract

Dry Ingredients

  • 1 1/2 cups gluten-free all-purpose flour (with xanthan gum) For best texture, use a 1-to-1 gluten-free blend with xanthan gum.
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp fine sea salt
  • 1 tsp ground cinnamon (optional)

Mix-ins (Optional)

  • 1/2 cup dairy-free chocolate chips or chopped nuts Add for extra flavor and texture.

Preparation

  • Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment or grease it lightly with oil.
  • In a bowl, whisk the ground flaxseed with warm water and let it sit for 5–10 minutes until gelled.
  • In a large bowl, mash the bananas until smooth. Stir in the flax mixture, melted oil, maple syrup, and vanilla.
  • In a separate bowl, whisk together the gluten-free flour, baking soda, baking powder, salt, and cinnamon.
  • Add the dry ingredients to the wet mixture and fold until just combined—be careful not to overmix. Gently stir in chocolate chips or nuts if using.

Baking

  • Pour the batter into the prepared pan and smooth the top. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the loaf cool in the pan for 10–15 minutes, then transfer to a rack to cool completely before slicing.

Notes

Measure flour properly: Spoon flour into the cup and level it off for accuracy and a lighter crumb. Don’t overmix: Fold gently; overworking gluten-free batters can make them gummy. If your batter seems dry, add 1–2 tbsp nondairy milk.
