  • 1/2 teaspoon vanilla extract
  • 1 tablespoon ground flaxseed (optional, for added fiber)

  • 1. Prepare the Batter: In a large mixing bowl, combine the all-purpose gluten-free flour blend, protein powder, baking powder, and salt. Whisk these dry components together thoroughly.
  • 2. Combine Wet Ingredients: In a separate bowl, whisk together the milk alternative, one large egg, sweetener, and vanilla extract. Ensure these are well blended. If using, whisk in the ground flaxseed.
  • 3. Mix and Rest: Pour the wet mixture into the dry ingredients. Stir until just combined. Avoid overmixing, as this can lead to tough pancakes. Let the batter rest for 5 minutes. This allows the mixture to thicken slightly.
