  • 2 cups cooked, shredded chicken Use rotisserie chicken for convenience.
  • 4 cups mixed salad greens (such as romaine, spinach, and arugula)
  • 1 medium red bell pepper, julienned
  • 1 medium carrot, shredded
  • 1 medium cucumber, sliced
  • 1 cup red cabbage, shredded
  • 1/4 cup chopped cilantro
  • 1/4 cup roasted peanuts, chopped

Peanut Dressing

  • 1/3 cup creamy peanut butter
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon honey or agave syrup
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • Water to thin (as needed) Add water until desired consistency is reached.

Preparation

  • In a mixing bowl, whisk together the peanut butter, soy sauce, honey (or agave), lime juice, and sesame oil until smooth. If the dressing is too thick, add water a little at a time until you reach your desired consistency.
  • In a large bowl, combine the salad greens, shredded chicken, bell pepper, carrot, cucumber, red cabbage, and cilantro. Toss gently to combine all the ingredients.
  • Pour the peanut dressing over the salad. Toss everything together until the salad is well-coated in the dressing.
  • Top with chopped roasted peanuts for an extra crunch before serving. This dish can be enjoyed right away or chilled in the fridge for about 30 minutes to let the flavors meld together.

Notes

Use rotisserie chicken to save time. Keep dressing separate for meal prep to prevent wilting. Consider adding crushed tortilla chips or crispy wonton strips for extra texture. Can pair with Thai Coconut Chicken Soup.
