  • 1 cup broccoli florets
  • 1 red bell pepper, diced
  • 1 carrot, thinly sliced
  • 2 cloves garlic, minced
  • 1/4 cup teriyaki sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Preparation

  • Start by cooking your rice according to package instructions.
  • In a large skillet over medium heat, add olive oil. Once hot, add the ground turkey and cook until browned, about 5-7 minutes.
  • Stir in the minced garlic, broccoli, bell pepper, and carrot. Cook for another 5 minutes until the vegetables are tender.
  • Pour the teriyaki sauce over the turkey and vegetables, stirring well to combine. Allow everything to cook for an additional 2-3 minutes until heated through.
  • Divide the cooked rice into bowls and top it with the turkey and vegetable mixture. Garnish with green onions and sesame seeds if desired.

Notes

Don’t overcook the vegetables for added texture and nutrients. Adjust the amount of teriyaki sauce as per taste. Excellent for meal prep; store in airtight containers in the refrigerator for up to 3 days.
