  • ¼ cup soy sauce (or a gluten-free alternative)
  • 2 tablespoons honey or maple syrup for sweetness
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 2 tablespoons of water for thickening

For Serving

  • 3 cups cooked rice (white, brown, or cauliflower rice)
  • 1 cup steamed broccoli
  • 1 cup carrots, shredded
  • Sesame seeds for garnish
  • Green onions, sliced for garnish

Instructions
 

Preparation

  • Cook the rice according to the package instructions. This can be done ahead of time for meal prep convenience.
  • In a large skillet, heat the olive oil over medium heat. Add the onion and sauté until it becomes translucent.
  • Stir in the garlic and ginger, cooking for another 30 seconds until fragrant.
  • Add the ground turkey to the skillet. Cook, breaking it apart with a spatula until it’s browned and cooked through, about 6-8 minutes.

Sauce Preparation

  • In a small bowl, whisk together soy sauce, honey or maple syrup, rice vinegar, and sesame oil.
  • Pour this mixture over the cooked turkey and let it simmer for a few minutes until combined.
  • Mix the cornstarch with water, then add it to the skillet, stirring well. Cook for an additional 2-3 minutes until the sauce has thickened.

Assembly

  • In a serving bowl, place a scoop of rice at the bottom.
  • Top with the teriyaki turkey mixture, followed by steamed broccoli and shredded carrots.
  • Finish with a sprinkle of sesame seeds and sliced green onions.

Notes

Use fresh ingredients for the best flavor. This dish is meal prep-friendly; make a big batch and store portions in airtight containers. Adjust the sauce's sweetness and saltiness to suit your taste. You can also make it spicier with red pepper flakes or sriracha.
