For the stir fry

  • 1 pound chicken breast, sliced into thin strips Use fresh, boneless chicken breasts for best results.
  • 2 cups mixed bell peppers, sliced Any combination of bell peppers works.
  • 1 cup broccoli florets Use fresh broccoli for optimal texture.
  • 1/2 cup sliced carrots Baby carrots can also be used, just slice them thin.
  • 1/4 cup soy sauce (or coconut aminos for a gluten-free option) Tamari can also be used for gluten-free.
  • 2 tablespoons teriyaki sauce Store-bought or homemade teriyaki sauce both work.
  • 1 tablespoon sesame oil Provides a rich flavor to the dish.
  • 3 cloves garlic, minced Use fresh garlic for the best flavor.
  • 1 tablespoon ginger, grated Fresh ginger enhances the flavor significantly.
  • as needed cooked rice for serving Any type of cooked rice works well.
  • as needed sesame seeds for garnish Toasted sesame seeds can add extra flavor.

Instructions

Preparation

  • Start by chopping all vegetables and slicing the chicken into thin strips. Preparing everything in advance makes the cooking process smooth and efficient.

Make the Sauce

  • In a bowl, combine the soy sauce, teriyaki sauce, sesame oil, minced garlic, and grated ginger.

Cook the Chicken

  • In a large pan or wok, heat a tablespoon of oil over medium-high heat. Add the chicken strips and cook until golden brown, about 5-7 minutes. Remove chicken and set aside.

Stir-Fry the Vegetables

  • In the same pan, add another tablespoon of oil if needed, then toss in the bell peppers, broccoli, and carrots. Stir-fry for about 3-4 minutes until tender but still crisp.

Combine Everything

  • Return the chicken to the pan and pour the teriyaki sauce over the mixture. Stir and cook for another 2-3 minutes to heat through.

Serve and Enjoy

  • Serve the stir-fry over rice and sprinkle with sesame seeds.

Notes

For optimal flavor, add fresh herbs like cilantro or green onions right before serving. Store leftovers in an airtight container for up to three days in the refrigerator or freeze for up to a month.
