Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large skillet, brown the ground beef over medium heat. Add the diced onion and sauté until translucent. Stir in the mixed vegetables and season with garlic powder, onion powder, salt, and pepper.
  • In a separate bowl, combine the sour cream and broth. Once the meat and veggies are well mixed, pour this creamy mixture over the skillet and stir until combined.
  • In a greased 9×13-inch baking dish, spread the meat and vegetable mixture evenly. Layer the tater tots on top, ensuring all areas are covered. Sprinkle shredded cheese evenly across the tater tots.
  • Bake the casserole in the preheated oven for about 30-35 minutes, or until the tater tots are golden brown and crispy.
  • Let it cool for a few minutes before serving.

Notes

For a vegetarian option, substitute ground beef with black beans or lentils. This casserole can be prepared a day in advance and stored in the fridge. Leftovers can be stored in the fridge for up to 3 days or frozen for up to a month.
