Ingredients
  

For the cake

  • 1 cup Gluten free 1 to 1 flour blend
  • 1 cup Pumpkin puree
  • 3 large Eggs
  • 1 cup Sugar (white or a mix of white and brown)
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Ginger
  • 1/4 teaspoon Nutmeg
  • 1 teaspoon Vanilla
  • 1/4 teaspoon Salt

For the filling

  • 8 oz Softened cream cheese
  • 1/4 cup Butter (softened)
  • 1 cup Powdered sugar
  • 1 teaspoon Vanilla
  • 1/8 teaspoon Salt

For rolling

  • 1/2 cup Powdered sugar to dust the towel

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a jelly roll pan (10x15 inches) with parchment paper.
  • Whisk the dry ingredients (flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt) in one bowl.
  • In another bowl, whisk the eggs and sugar until it looks lighter and thicker.
  • Mix in the pumpkin and vanilla, then fold in the dry ingredients.
  • Spread the batter evenly in the pan and bake for 12 to 15 minutes until it springs back when touched.

Rolling

  • After removing the cake from the oven, let it sit for about 2 minutes.
  • Dust your kitchen towel generously with powdered sugar.
  • Flip the cake onto the towel and peel off the parchment paper carefully.
  • Starting from the short end, roll the cake up with the towel inside. Let it cool completely while rolled for 45 to 60 minutes.

Filling and Chilling

  • Unroll the cake and spread the cream cheese filling evenly over it.
  • Re-roll the cake without the towel and chill it for at least 1 hour before slicing.

Notes

To prevent cracking, avoid overbaking, roll the cake while warm, and use enough powdered sugar to dust the towel. For best results, slice the roll when it’s chilled to keep the fillings intact.
