  • wire rack for cooling
  • oven

Ingredients

  • 1 cup almond flour
  • 0.5 cup gluten-free oat flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.25 tsp ground cloves
  • 1 pinch salt
  • 2 large eggs
  • 0.25 cup coconut sugar
  • 0.33 cup unsweetened applesauce
  • 2 tbsp avocado oil or melted unsalted butter
  • 1 tsp vanilla extract
  • 0.5 cup finely chopped apple (peeled)
  • cinnamon sugar (¼ cup coconut sugar + ½ tsp cinnamon), optional
  • melted dairy-free white or dark chocolate, optional
  • gluten-free candy eyes or Halloween sprinkles, optional

Instructions

  • Preheat your oven to 350°F (175°C) and lightly grease a 6- or 12-cavity donut pan.
  • In a bowl, whisk together almond flour, oat flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
  • In another bowl, beat the eggs with coconut sugar. Stir in applesauce, oil or melted butter, and vanilla extract.
  • Pour wet ingredients into the dry and stir until just combined. Gently fold in the chopped apples.
  • Use a spoon or piping bag to fill each donut cavity about ¾ full with the batter.
  • Bake for 14–16 minutes or until golden and springy to the touch. Let cool in pan for 5 minutes, then transfer to a wire rack.
  • Once cooled, decorate with cinnamon sugar, melted chocolate, candy eyes, or spooky sprinkles as desired.

Notes

Don’t overmix the batter, and use finely chopped apples for even baking. For extra crunch, brush with melted butter before dipping in cinnamon sugar. Let donuts cool completely before adding chocolate or decorations.
