Main ingredients

  • 10 ounces Frozen chopped spinach, thawed and squeezed very dry Fresh spinach can be used but frozen is easier.
  • 8 ounces Cream cheese, softened Soften in the microwave for 10-15 seconds if needed.
  • 1 cup Sour cream
  • 0.5 cup Mayonnaise You can use more sour cream instead of mayo.
  • 1-2 cloves Garlic, minced Or 1 teaspoon garlic powder.
  • 2 tablespoons Onion, finely minced Or 1 teaspoon onion powder.
  • 0.5 cup Parmesan, grated For salty flavor.
  • 1 cup Mozzarella, shredded Optional, for extra meltiness.
  • to taste Salt and pepper
  • 1 Squeeze of lemon (optional)
  • to taste Red pepper flakes (optional)
  • to taste Chopped artichokes (optional)

Instructions
 

Preparation

  • Thaw and squeeze the spinach. Microwave or thaw overnight and squeeze dry.
  • In a medium bowl, stir together softened cream cheese, sour cream, and mayo until smooth.
  • Add garlic, onion, Parmesan, salt, pepper, and any additional extras you like.
  • Fold in the squeezed spinach and adjust the seasoning to taste.

Serving

  • For cold dip, cover and chill for at least 30 minutes.
  • For warm dip, spread into a baking dish, top with mozzarella, and bake at 375°F for 15-20 minutes until bubbly.

Notes

Squeeze the spinach well to avoid watery dip. Let dip rest for better flavor if serving cold. Can be made ahead of time and stored in the fridge for 3-4 days.
