Ingredients
  

For the peach filling

  • 6 cups ripe peaches, peeled and sliced (about 6–8 medium peaches) Use the ripest peaches for the best flavor.
  • 1/2 cup granulated sugar Plus additional 1 tbsp for peaches.
  • 2 tbsp lemon juice
  • 1 tsp ground cinnamon

For the topping

  • 1 cup gluten-free all-purpose flour blend (with xanthan gum)
  • 1/2 cup almond flour Can substitute with other flours if desired.
  • 1/4 cup brown sugar, packed
  • 2 tsp baking powder
  • 1/2 tsp fine sea salt
  • 3/4 cup milk (dairy or unsweetened almond milk) Almond milk works beautifully as a dairy-free option.
  • 1/4 cup neutral oil (such as canola) or melted butter
  • 1 large egg
  • 1 tsp pure vanilla extract
  • Optional: coarse sugar for sprinkling, pinch of nutmeg

Instructions
 

Preparation

  • Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  • Toss sliced peaches with 1/2 cup sugar, 1 tbsp sugar, lemon juice, and cinnamon. Let sit for 10 minutes to macerate.

Make the batter

  • In a bowl, whisk together gluten-free flour blend, almond flour, brown sugar, baking powder, and salt.
  • In another bowl, combine milk, oil, egg, and vanilla. Stir wet into dry ingredients until smooth.

Assembly

  • Spoon the peaches (with juices) into the prepared dish in an even layer.
  • Drop spoonfuls of batter over the peaches — it’s okay if it doesn’t cover every inch. The batter will spread and bake into a golden topping.

Bake

  • Sprinkle coarse sugar on top if desired. Bake for 35–40 minutes until the topping is golden and the peach juices are bubbling.

Cool and serve

  • Let rest 10–15 minutes before serving. This cobbler is lovely warm with ice cream or whipped cream.

Notes

Use the ripest peaches for sweetness. Adjust sugar based on peach sweetness. For juicy peaches, add cornstarch before baking.
