Ingredients
  

For the dough

  • 2 cups gluten-free all-purpose flour
  • 1/2 teaspoon xanthan gum (if not included in your flour blend) Optional, based on flour blend
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup whole milk (or your favorite plant-based milk)
  • 1/4 cup unsalted butter, melted
  • 1 large egg Room temperature is preferred
  • 1 tablespoon vanilla extract

For the filling

  • 1 tablespoon ground cinnamon
  • 1/3 cup brown sugar, packed
  • 2 tablespoons sugar (for the filling)

Preparation

  • In a large mixing bowl, combine gluten-free flour, xanthan gum, sugar, baking powder, and salt. Whisk those dry ingredients together until mixed.
  • In another bowl, whisk together milk, melted butter, egg, and vanilla extract. Slowly add this mixture to your dry ingredients, stirring until a dough forms. It should be soft and slightly sticky.
  • Cover the bowl with a clean dish towel and let the dough rest in a warm place for about 30 minutes.
  • Once rested, turn the dough onto a lightly floured surface and roll it out into a rectangle, aiming for about 1/4 inch thickness.

Filling and Baking

  • In a small bowl, mix together the brown sugar, ground cinnamon, and sugar. Sprinkle this mixture evenly over the rolled-out dough, leaving a small border around the edges.
  • Gently roll the dough up from one edge to the other, creating a log shape. Slice into 8 to 10 rolls and place them in a greased baking dish.
  • Preheat your oven to 350°F (175°C). Bake the cinnamon rolls for 25–30 minutes, or until they are lightly golden on top.

Notes
