Preparation

  • Season the beef chuck roast generously with salt and pepper.
  • Heat the olive oil in a large skillet over medium-high heat.
  • Sear the roast on all sides until it’s nicely browned, about 3-4 minutes per side.

Layering and Cooking

  • Place the sliced onion at the bottom of the slow cooker.
  • Arrange the carrots and potatoes over the onions.
  • Place the seared roast on top of the vegetables.
  • In a small bowl, mix the minced garlic, beef broth, Worcestershire sauce, thyme, and rosemary.
  • Pour this mixture over the roast and vegetables.
  • Cover the slow cooker and cook on low for 8 hours or high for 4-5 hours, until the roast is tender and easily shreds with a fork.

Serving

  • Remove the roast and vegetables from the slow cooker, letting the roast rest for a few minutes before slicing.
  • Serve with the rich broth drizzled over the top.

Notes

For best results, choose a chuck roast for tenderness. Adjust vegetables to your liking and consider flavor variations by adding herbs or a splash of wine. Leftovers can be stored in the fridge for up to 3 days and freeze well.
