  • 1 cup wild rice, rinsed

  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup heavy cream or coconut milk
  • Salt and pepper to taste

Preparation

  • Start by placing the chicken breasts at the bottom of the slow cooker.
  • Layer the rice, onions, carrots, celery, and garlic over the chicken.
  • Gently pour in the chicken broth and add in the thyme and rosemary.
  • Sprinkle salt and pepper to taste.
  • Secure the lid and set your slow cooker on low for 6-8 hours or on high for 3-4 hours.
  • Once cooked, remove the chicken breasts, shred them, and return the chicken to the pot.
  • Stir in the heavy cream or coconut milk to enrich your soup, giving it a silky texture.

Notes

To prevent overcooking, consider adding the wild rice during the last hour of cooking for a firmer texture. If you'd like a thicker soup, blend a portion of it and stir it back in. Fresh herbs can elevate the flavor even more.
