Beef and Broccoli Ingredients

  • 2 pounds beef (flank steak or sirloin, trimmed and sliced thin) Opt for flank steak or sirloin for best results.
  • 4 cups fresh broccoli florets Add near the end of cooking for best color.
  • 1/4 cup coconut aminos Can substitute with tamari or soy sauce if not strict on Whole30.
  • 2 tablespoons sesame oil
  • 2 teaspoons minced garlic
  • 1 teaspoon minced ginger
  • Salt and pepper to taste
  • Optional: sesame seeds for garnish

Instructions
 

Preparation

  • Begin by slicing the beef thinly against the grain.
  • In a bowl, combine coconut aminos, sesame oil, minced garlic, and ginger. Whisk until blended.
  • Place the beef in the slow cooker, followed by the sauce mixture. Add salt and pepper to taste, and stir well to coat the beef.

Cooking

  • Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
  • When the beef is nearly done, add the broccoli florets on top and cover again, cooking for an additional 30 minutes until the broccoli is bright green and tender.

Serving

  • Remove from the slow cooker and garnish with sesame seeds if desired.
  • Serve warm over cauliflower rice or your favorite grain.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a microwave or pan.
