  • 1 pound ground beef (85 or 90 percent lean)
  • 1 small onion, diced
  • 2 to 3 cloves garlic, minced
  • 1 each bell pepper, chopped
  • 2 cups zucchini or cauliflower rice (or a mix)
  • 1 can diced tomatoes, drained a bit
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder (check it is gluten free)
  • Salt and pepper to taste
  • 1 to 1.5 cups shredded cheese (optional) optional but amazing
  • Fresh lime, cilantro, or green onions for topping

  • Heat a large skillet over medium high heat. Add the ground beef and break it up with a spoon. Cook until it is no longer pink. If there is a lot of grease, drain most of it but leave a little for flavor.
  • Toss in diced onion and cook for about 3 minutes. Add garlic and stir for about 30 seconds, just until it smells good.
  • Add bell pepper and zucchini or cauliflower rice. Cook 4 to 6 minutes until the veggies soften.
  • Stir in diced tomatoes and tomato paste, then add smoked paprika, cumin, chili powder, salt, and pepper. Let it simmer for 3 to 5 minutes.
  • If using cheese, sprinkle it over the top, cover the skillet, and let it melt for 2 minutes. Turn off heat and add toppings like lime, cilantro, green onions, or avocado.

Notes

This dish is a comforting yet balanced meal with protein from the beef and fiber from the vegetables. If keeping it lower carb, use cauliflower rice. Store leftovers in airtight containers and reheat with a splash of broth for best texture.
