  • 2 tablespoons olive oil You can also use melted coconut oil.
  • 3/4 cup warm water Adjust as necessary for dough consistency.

Preparation

  • In a large mixing bowl, whisk together the gluten-free flour and salt to ensure even distribution of flavor.
  • Pour in the olive oil and warm water. Mix with a spatula or your hands until a dough forms, adjusting with gluten-free flour or warm water as necessary.
  • On a lightly floured surface, knead the dough for about 2-3 minutes until smooth to develop texture.
  • Divide the dough into small balls, about the size of a golf ball. Flatten each ball slightly and roll each one out into a thin circle, aiming for a thickness of about 1/8 inch.

Cooking

  • Heat a non-stick skillet over medium-high heat. Cook each wrap for about 1-2 minutes on each side until brown spots form. Repeat with remaining dough.

Serving

  • Serve immediately with your favorite seasonal fillings such as roasted vegetables or spreads.

Notes

For best results, let the dough rest for 10-15 minutes to make it more pliable. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
