Shrimp Stir Fry with Vegetables

Ingredients
  

For the Stir Fry

  • 1 pound Shrimp, peeled and deveined Tails on or off is your choice.
  • 1 cup Bell pepper, sliced
  • 1 cup Broccoli florets
  • 1 cup Snap peas
  • 1 cup Carrots, sliced
  • 1 cup Mushrooms, sliced
  • 2 tablespoons Neutral oil for frying
  • 2 teaspoons Toasted sesame oil A little goes a long way.
  • 2 tablespoons Rice vinegar or lime juice
  • 1 teaspoon Honey or brown sugar (optional) Balances the salt.
  • 1 teaspoon Cornstarch or arrowroot (optional) For thickening.
  • 4 cups Cooked rice or rice noodles, to serve

For the Garlic Ginger Sauce

  • 1/4 cup Gluten free tamari or soy sauce
  • 2 cloves Garlic, minced Fresh preferred.
  • 1 tablespoon Fresh ginger, grated Fresh preferred.

Instructions
 

Preparation

  • Pat the shrimp dry to ensure a good sear.
  • In a small bowl, mix together tamari, rice vinegar, sesame oil, garlic, ginger, and honey. If thickening, mix cornstarch with cold water, then add it to the mixture.

Cooking

  • Heat a large skillet or wok on medium-high heat and add neutral oil.
  • Cook the shrimp in a single layer for about 1 to 2 minutes per side until just pink, then remove to a plate.
  • Add more oil and toss in the carrots and broccoli first; cook for 2 to 3 minutes.
  • Add quicker-cooking veggies like bell peppers and snap peas.
  • Add garlic and ginger in the last 30 seconds to prevent burning.
  • Pour in the sauce and stir. If using cornstarch, it will thicken quickly.
  • Add the shrimp back in and toss for 30 to 60 seconds to warm through.
  • Serve immediately over rice or noodles.

Notes

For variations, try different sauces such as spicy chili lime or peanut-style. As always, ensure ingredients are gluten-free if necessary.
