Ingredients
  

  • 1.5 lbs boneless skinless chicken thighs, sliced into strips
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • 1 lime, juiced
  • 8 gluten-free tortillas (cassava or almond flour preferred)
  • optional toppings: fresh cilantro, sliced avocado, lime wedges

Instructions
 

  • Preheat your oven to 425°F and line a sheet pan with parchment paper.
  • In a large bowl, toss sliced chicken, bell peppers, and red onion with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and lime juice.
  • Spread everything evenly in a single layer on the prepared sheet pan.
  • Roast for 20–25 minutes, flipping halfway through, until the chicken is cooked through and vegetables are slightly charred.
  • During the last 5 minutes of roasting, wrap gluten-free tortillas in foil and place them in the oven to warm.
  • Remove everything from the oven. Assemble fajitas by adding chicken and veggies to warm tortillas. Top with avocado, cilantro, or lime juice if desired.

Notes

Wrap gluten-free tortillas in foil and warm them in the oven for the last 5 minutes of roasting to keep them soft and pliable. For dairy-free, skip the cheese toppings. Add avocado or cilantro for an extra flavor boost. Perfect for meal prep or family-style dinners.
