  • 1 lb halal chicken sausage, sliced into 1/2-inch rounds You can use turkey sausage as an alternative.
  • 2 tbsp olive oil Divided for cooking.
  • 1 medium sweet potato, peeled and diced (about 2 cups)
  • 1 medium red bell pepper, chopped
  • 1 small red onion, thinly sliced
  • 2 cups baby spinach or kale
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/4 tsp crushed red pepper (optional)

  • 1 tbsp apple cider vinegar or lemon juice
  • to taste Optional toppings: toasted pepitas, chopped parsley, or a dollop of yogurt

Instructions
 

Preparation

  • Dice the sweet potato and chop the veggies so nothing sits idle once the pan is hot.

Cooking the Sausage

  • Heat 1 tbsp olive oil in a large skillet over medium-high heat.
  • Add sliced sausage in a single layer and cook until golden and slightly crisp around the edges. Remove and set aside.

Cooking the Sweet Potato

  • In the same skillet, add remaining 1 tbsp olive oil. Add sweet potatoes, season with a pinch of salt, and cook, stirring occasionally, until tender and caramelized.
  • If they brown too fast, reduce heat and cover for a minute to steam through.

Adding Vegetables

  • Stir in bell pepper and onion; cook until softened.
  • Add garlic, smoked paprika, cumin, and crushed red pepper, stirring until fragrant.

Finishing Touches

  • Return sausage to the skillet, toss in spinach or kale until wilted, and splash with apple cider vinegar or lemon juice.
  • Adjust salt and pepper to taste.

Serving

  • Spoon into bowls and garnish with pepitas, parsley, or yogurt. Serve with crusty bread or over rice for a heartier meal.

Notes

Ensure even cooking by cutting vegetables to a similar size. Don't overcrowd the pan when browning the sausage for better flavor.
