Ingredients
  

Chicken and Sauce

  • 1 pound Chicken breast or thighs, cut into bite-size pieces Thighs stay juicier; breasts are lean.
  • 1/4 cup Gluten free tamari or gluten free soy sauce Ensure it's certified gluten free.
  • 2 cloves Garlic, minced
  • 1 tablespoon Fresh ginger, minced Can use ginger paste.
  • 1 tablespoon Sesame oil Optional but recommended.
  • 1 tablespoon Cornstarch or arrowroot starch For thickening the sauce.
  • 1 teaspoon Honey or brown sugar Optional for sweetness.

Vegetables

  • 2 cups Bell peppers, broccoli, carrots, snap peas, zucchini, mushrooms, or a mix Use any veggies you have on hand.
  • 2 green onions Green onions for topping Chopped, for garnish.
  • 1 teaspoon Chili flakes or sriracha Optional for heat.

Instructions
 

Preparation

  • In a small bowl, mix gluten free tamari, a little water, minced garlic, ginger, sesame oil, and cornstarch. Add honey if desired.

Cooking the Chicken

  • Heat a splash of oil in a large skillet on medium high. Add chicken in one layer and let cook without stirring for a couple of minutes to develop color.
  • Stir and cook until just done, then transfer to a plate.

Cooking the Veggies

  • Add more oil if necessary. Add firm veggies first (like carrots and broccoli) for a few minutes.
  • Then add softer veggies (like peppers, snap peas, zucchini) and keep stirring to maintain crispness.

Bringing it Together

  • Add the chicken back to the pan, pour in the sauce, and stir for about 30 to 60 seconds until it thickens and coats everything.

Finishing Touches

  • Taste and adjust seasoning. Add more tamari for salt, a squeeze of lime for brightness, or chili flakes for extra heat. Top with green onions.

Notes

Make extra for lunches; the flavors improve overnight. Store rice and stir fry separately to keep the rice from getting soggy. Great served with rice, cauliflower rice, or quinoa.
