Ingredients
  

  • 1 lb boneless chicken thighs or breasts, sliced thin
  • 2 tbsp tamari (gluten-free soy sauce)
  • 1 tbsp cornstarch (gluten-free certified)
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp sesame oil
  • 1 red bell pepper, sliced
  • 1 carrot, thinly sliced
  • 1 cup broccoli florets
  • 1 cup snap peas or green beans
  • 1/4 cup water (for sauce slurry)
  • 1 tsp rice vinegar or maple syrup (optional)
  • 1 tbsp chopped scallions or sesame seeds for garnish
  • 4 cups cooked rice or gluten-free noodles (for serving)

Instructions
 

  • Slice chicken and vegetables. In a bowl, marinate chicken with tamari, garlic, ginger, and cornstarch for 10 minutes.
  • Heat 1 tbsp sesame oil in a large skillet or wok over medium-high. Add chicken and stir-fry until browned and cooked through, about 5–6 minutes. Remove and set aside.
  • Add remaining oil to pan. Stir-fry vegetables for 3–4 minutes until just tender-crisp.
  • Return chicken to the pan. Mix water with extra tamari or vinegar/maple syrup if using, and pour in. Stir until sauce thickens slightly and everything is coated.
  • Remove from heat. Garnish with scallions or sesame seeds. Serve hot over rice or noodles.

Notes

For extra flavor, add a splash of rice vinegar or maple syrup to the sauce. Customize with mushrooms, zucchini, spinach, or snow peas. Use coconut aminos for a soy-free option. This stir-fry also works great with shrimp or tofu instead of chicken. Meal-prep friendly  lasts up to 4 days in the fridge.
