Ingredients
  

For Marinating the Chicken

  • 4 pieces chicken thighs (bone-in)
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • ½ teaspoon cinnamon
  • to taste Salt and pepper
  • 1 cup plain yogurt
  • 2 tablespoons olive oil
  • 1 piece Juice of 1 lemon

For Garnishing

  • to taste Fresh parsley for garnish

Marination

  • In a large mixing bowl, combine the yogurt, olive oil, lemon juice, turmeric, cumin, coriander, cinnamon, garlic, salt, and pepper. Add the chicken thighs and ensure they are well-coated. Allow the chicken to marinate for at least 1 hour, or ideally overnight in the refrigerator for the best flavor.

Preparation

  • Preheat your oven to 375°F (190°C). While the oven heats, remove the chicken from the marinade and shake off any excess.

Cooking

  • In a large ovenproof skillet, heat a little olive oil over medium heat. Add the chopped onion and a pinch of salt, sautéing until the onions are golden brown.
  • Place the marinated chicken thighs skin-side down in the skillet. Allow them to brown for about 5 minutes before flipping to the other side.
  • Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is fully cooked and juices run clear. For an extra crispy skin, broil for an additional 2-3 minutes.

Serving

  • Once done, let the chicken rest for a few minutes before serving. Garnish with fresh parsley and serve with rice or warm bread.

Notes

Allowing the chicken to marinate overnight will intensify the flavors significantly. Persian Chicken pairs beautifully with saffron rice or a simple salad for a complete meal. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C) for safety.
