Ingredients
  

  • 1 medium head of cauliflower, cut into bite-sized florets
  • 2 large eggs
  • 1 1/2 cups gluten-free breadcrumbs
  • 3/4 cup grated Parmesan cheese
  • 1 1/2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • 1/2 tsp smoked paprika
  • salt and black pepper to taste
  • olive oil spray for baking

Instructions
 

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly spray it with olive oil. Rinse and dry your cauliflower florets thoroughly.
  • In a bowl, beat the eggs. In another bowl, combine breadcrumbs, Parmesan, garlic powder, onion powder, parsley, paprika, salt, and pepper.
  • Dip each cauliflower floret in the egg, then coat with the breadcrumb mixture. Place spaced evenly on the prepared baking sheet.
  • Lightly spray the tops with olive oil. Bake for 20–25 minutes, flipping halfway, until golden brown and tender.

Notes

Be sure to dry the cauliflower well for max crispiness. Don’t overcrowd the pan space helps them roast. For extra crunch, mix in gluten-free panko. Works great in an air fryer at 400°F for 12–15 minutes. Serve with your favorite dipping sauce like garlic aioli or spicy mayo.
