Ingredients
  

For the Chicken

  • 2 pieces boneless, skinless chicken breasts (about 1 lb), trimmed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

For the Salad

  • 6 cups mixed greens (romaine, baby spinach, arugula)
  • 1 piece ripe avocado, sliced
  • 2 pieces hard-boiled eggs, quartered
  • 1 cup cherry tomatoes, halved
  • 1/2 piece cucumber, thinly sliced
  • 3 strips turkey bacon, cooked and crumbled
  • 1 small red onion, thinly sliced
  • 1/4 cup toasted walnuts or pecans

For the Dressing

  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic (minced)
  • Salt and pepper to taste

Instructions
 

Marinate and Grill the Chicken

  • Rub the chicken breasts with olive oil, smoked paprika, garlic powder, salt, and pepper.
  • Preheat your grill or grill pan over medium-high heat.
  • Grill the chicken 5–6 minutes per side, or until juices run clear and internal temperature reaches 165°F (74°C).
  • Let the chicken rest for 5 minutes, then slice.

Prepare the Salad Base

  • While the chicken rests, assemble mixed greens in a large bowl or platter.
  • Arrange avocado, hard-boiled eggs, cherry tomatoes, cucumber, red onion, turkey bacon, and toasted nuts in rows for that classic Cobb presentation.

Make the Dressing

  • Whisk together olive oil, apple cider vinegar, Dijon, minced garlic, salt, and pepper until emulsified.
  • Taste and adjust seasoning.

Assemble and Serve

  • Lay sliced grilled chicken on top of the arranged salad.
  • Drizzle dressing over the salad or serve on the side so everyone can dress to taste.
