  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper, to taste

Preparation

  • Start by seasoning the chicken pieces with salt, pepper, paprika, and thyme.
  • In a large pot, heat the olive oil over medium heat. Add chopped onions and garlic, sautéing until fragrant and translucent.
  • Add the seasoned chicken to the pot and cook until browned, about 5-7 minutes.
  • Stir in the rice, ensuring it's mixed well with the chicken and aromatics. Pour in the chicken broth and bring the mixture to a boil.
  • Once boiling, reduce the heat, add the mixed vegetables, and cover. Let it simmer for about 20-25 minutes until the rice is cooked and has absorbed most of the liquid.
  • Fluff the rice with a fork, adjust the seasoning if needed, and serve warm.

Notes

Use a heavy-bottomed pot to ensure even heat distribution. Stir gently once you add the rice to avoid mushiness. Allow the dish to sit for a few minutes after cooking to develop the flavors.
