  • 1 pound Italian sausage, casing removed For additional flavor, consider using spicy Italian sausage.
  • 1 package (16 ounces) gnocchi Gluten-free gnocchi can be used for a gluten-free version.
  • 2 cups fresh spinach, chopped
  • 1 bell pepper, diced any color Feel free to use different seasonal vegetables.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Olive oil, for cooking
  • Grated Parmesan cheese, for serving

Preparation

  • In a large skillet over medium heat, add a splash of olive oil. Once hot, add the sausage, breaking it into small pieces. Cook until browned, about 5-7 minutes.
  • Stir in the diced onion and bell pepper, cooking until softened, around 3-4 minutes. Add the minced garlic and cook for an additional minute, until fragrant.
  • Add the undrained diced tomatoes, and then carefully fold in the gnocchi. Sprinkle the Italian seasoning, salt, and pepper over the mixture. Stir to combine.
  • Reduce the heat to low, cover the pan, and let it simmer for about 10-12 minutes.
  • Stir in the chopped spinach and cook for another couple of minutes until wilted. Serve hot, topped with freshly grated Parmesan cheese.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat gently on the stove or in the microwave, adding a splash of water or broth if necessary.
