One Pan Gluten Free Dairy Free Chicken Alfredo

Ingredients
  

  • 1 lb boneless, skinless chicken breast, thinly sliced
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2.5 cups unsweetened plain almond milk (or other dairy-free milk)
  • 1.5 cups gluten-free penne or fettuccine
  • 1 tbsp nutritional yeast (optional)
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp dried basil or Italian seasoning
  • 0.25 cup unsweetened dairy-free cream (coconut or oat-based)
  • 2 tbsp tapioca or arrowroot starch
  • 2 tbsp water (for slurry)
  • fresh parsley, for garnish

Instructions
 

  • In a large skillet, heat olive oil over medium-high. Add sliced chicken and sear for 3–4 minutes per side until golden and cooked through. Remove and set aside.
  • Lower heat to medium. Add minced garlic to the same pan and stir for 30 seconds. Pour in almond milk, scraping any browned bits. Add nutritional yeast, onion powder, basil, salt, and pepper.
  • Add gluten-free pasta to the pan. Cover and simmer for 10–12 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
  • Stir in dairy-free cream. Mix tapioca or arrowroot with water to create a slurry, then stir it in. Let simmer 2–3 minutes until thickened.
  • Return cooked chicken to the pan. Let it all bubble together for another minute. Garnish with fresh parsley and serve hot.

Notes

For extra veggies, add spinach or broccoli in the final 5 minutes. Make it vegan by swapping chicken for mushrooms or chickpeas. Stir in vegan cream cheese or double the nutritional yeast for a cheesier flavor. Spice lovers can add red pepper flakes or cayenne.
